Savory Chinese Scallion Pancakes

For the Dough
- 2 cups all purpose flour
- 1/2 tsp salt
- 1/2 cup boiling water
- 1/4 cup cool water
For the Filling
- 1/4 cup + 2 tbsp all purpose flour
- 1/4 cup cooking oil
- 3/4 tsp salt
- 1 cup green onions about 8 to 10 split and chopped
- 1-2 tbsp vegetable oil for pan frying
Dough Preparation
Combine 2 cups flour and 1/2 tsp salt in a bowl. Gradually stir in 1/2 cup boiling water.
Mix in 1/4 cup cool water to form a soft dough. Knead the dough on a floured surface until smooth. Cover and let rest for 30 minutes.
For the Filling
In a separate bowl, mix 1/4 cup + 2 tbsp all purpose flour, 1/4 cup cooking oil and 3/4 tsp salt.
Add in green onions and stir gently.
To Prepare
Divide rested dough into 4 portions. Roll out one portion into a thin rectangle on a floured surface.
Evenly spread a portion of prepared filling over the dough.
Roll the dough tightly to create a log. Then coil it into a spiral shape. Gently flatten the spiral. Then roll the spiral again into a thin pancake.
Cooking
Heat vegetable oil in a skillet. Place pancake in the skillet and cook until both sides are golden brown. Repeat the process until the entire batch if done.
Cut the cooked pancakes into wedges and serve with your favorite dipping sauce. Enjoy!
