Ingredients
  

For the Dough

  • 2 cups all purpose flour
  • 1/2 tsp salt
  • 1/2 cup boiling water
  • 1/4 cup cool water

For the Filling

  • 1/4 cup + 2 tbsp all purpose flour
  • 1/4 cup cooking oil
  • 3/4 tsp salt
  • 1 cup green onions about 8 to 10 split and chopped
  • 1-2 tbsp vegetable oil for pan frying

Instructions
 

Dough Preparation

  • Combine 2 cups flour and 1/2 tsp salt in a bowl. Gradually stir in 1/2 cup boiling water.
  • Mix in 1/4 cup cool water to form a soft dough. Knead the dough on a floured surface until smooth. Cover and let rest for 30 minutes.

For the Filling

  • In a separate bowl, mix 1/4 cup + 2 tbsp all purpose flour, 1/4 cup cooking oil and 3/4 tsp salt.
  • Add in green onions and stir gently.

To Prepare

  • Divide rested dough into 4 portions. Roll out one portion into a thin rectangle on a floured surface.
  • Evenly spread a portion of prepared filling over the dough.
  • Roll the dough tightly to create a log. Then coil it into a spiral shape. Gently flatten the spiral. Then roll the spiral again into a thin pancake.

Cooking

  • Heat vegetable oil in a skillet. Place pancake in the skillet and cook until both sides are golden brown. Repeat the process until the entire batch if done.
  • Cut the cooked pancakes into wedges and serve with your favorite dipping sauce. Enjoy!
