Saint Patrick's Day Green Pancakes

- 1½ cups all-purpose flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- 1¼ cups milk (or non-dairy alternative)
- 1 tbsp white vinegar
- 1 large egg
- 2 tbsp vegetable oil
- 1 tsp vanilla extract
- green food coloring
- whipped cream topping, optional
- green sprinkles
In a small bowl, combine the milk and vinegar. Let it sit for about 5 minutes to thicken slightly. This will create a buttermilk effect.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk the buttermilk mixture, egg, oil, vanilla extract, and a few drops of green food coloring. Adjust the food coloring to reach your desired shade of green.
Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix—some lumps are okay.
Heat a lightly greased griddle or non-stick pan over medium heat. Pour ¼ cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
Stack the pancakes on a plate. Top with a generous amount of whipped cream and a sprinkling of festive green sprinkles.
