Ingredients You’ll Need For This Recipe
  • 2 lbs. yellow potatoes
  • 3 egg yolks
  • 1/3 cup heavy cream
  • 4 tbsp unsalted butter
  • ½ tsp salt
  • ½ tsp black pepper
Step-by-Step Instructions

Step 1: Start by boiling a medium pot of water with a dash of salt.

Step 2: Peel the potatoes and cut them in fours or chunks.

Step 3: Cook the potatoes for about 25 minutes, or until fork tender.

Step 4: Preheat the oven to 400 degrees Fahrenheit and prepare a baking tray with nonstick spray.

Step 5: Once the potatoes are cooked, drain them, and let them cook off for about 5 minutes. Then add to a medium sized bowl.

Step 6: To the bowl of potatoes, add the heavy cream, salt, pepper, and half of the butter. Put the remaining butter aside.

Step 7: Mash the potatoes until smooth. You can also used left-over mashed potatoes and start with Step 8 below!

Step 8: Add the egg yolks and mash some more, but make sure not to overdo it.

Step 9: Put the mashed potatoes in a piping bag with a star tip. 

Step 10: Pipe the potatoes onto the prepared baking tray like an ice cream swirl.

Step 11: Then melt the remaining butter in the microwave for 20-30 seconds and brush it onto the potatoes.

Step 12: Bake in the oven for 25-30 minutes or until golden brown.
