Ingredients You’ll Need For This Recipe
  • 2 Cups Shredded Rotisserie Chicken
  • 8 Oz Cream Cheese; Softened and Cubed
  • 3 Cups Shredded Cheddar Cheese; Halved
  • 10 Oz Can Red Enchilada Sauce
  • 15 Oz Can Black Beans; Rinsed and Drained
  • 4 Oz Can Diced Green Chilis
  • 1 Package Taco Seasoning
  • Chopped Green Onions: Optional For Garnish
Step-by-Step Instructions

Step 1: Cut cherry tomatoes in half, lengthwise. Slice olives in half lengthwise, too.

Step 2: Place each tomato half cut side down on a cutting board. Carefully cut a slit down the back to create wings. Gently wiggle your knife to slightly separate the wings.

Step 3: Drizzle a small amount of balsamic glaze onto each slice of mozzarella.

Step 4: Place a fresh basil leaf on top of the glazed mozzarella.

Step 5: Set a tomato half on top of the basil leaf, cut side down. Add one piece of black olive to the front of each tomato half to create the ladybug’s head. Use a bottle of balsamic glaze or a toothpick to gently dot the back of each tomato to create ladybug spots. Place each caprese ladybug on a Ritz cracker and enjoy!
